Guest guest Posted November 13, 2002 Report Share Posted November 13, 2002 These were so good, and my kids loved them. Oddly, they had a rich buttery flavor to them yet they contain no butter. Yummy indeed. Oat Pancakes 1 cup quick cooking oats 1 cup flour 2 Tbs sugar 2 tsp baking pwdr 1 tsp salt 2 eggs, lightly beaten 1 1/2 cups milk 1/4 cup vegetable oil 1 tsp lemon juice In a mixing bowl, combine oats, flour, sugar, baking powder, and salt. Make a well in the center. Combine eggs, milk, oil, and lemon juice; pour into well and stir until just moistened. Pour batter by 1/4 cupfuls onto hot griddle; turn when bubbles form on top of pancake. Cook until second side is golden brown.
