This is a family favourite, and real “comfort food” for me.

Flapper Pie

Crust:

1 ¼ cups graham crumbs

¼ cup melted butter

¼ cup sugar

Filling:

2 cups milk

3 egg yolks

½ cup sugar

2 ½ tablespoons corn starch

pinch salt

1 teaspoon vanilla

1 teaspoon butter

Meringue:

3 egg whites

3 tablespoons sugar

- Combine crust ingredients and press into pie pan. Cook for about 10 minutes at 300F. Set aside.

- Combine milk, egg yolks and sugar in a medium saucepan. Dissolve corn starch in a bit of cold water and add to milk mixture. Stir over medium heat until thick. Don’t leave this unattended as it will scorch easily. You need to stir almost constantly.

- Bring filling to a boil very briefly, still stirring. Stir in salt, vanilla and butter. Pour into shell. Allow to set briefly

- Beat egg whites and sugar into stiff peaks. Spread over top of pie and sprinkle with a few graham crumbs. Broil briefly, until meringue is golden brown (this happens VERY fast – be careful not to burn it!)

- Chill pie in refrigerator until it’s completely set. (We could leave it alone until it was set, and always enjoyed the messy “pieces” Mom would give us when she couldn’t stand our whining any more.)

My mom always made this when I was younger. This has got to be my

most favoritest pie in the whole world, aside from the harvest apple

pie recipe grandma had found printed on the side of the milk carton.

One of these days I'm going to have to make a flapper pie. Yum!
