This is a favorite in Costa Rica! Yummy~

 

GALLO PINTO 1 finely chopped onion1 lb. cooked black beans2 cups cooked white riceButter for frying2 tablespoons chopped cilantroSalt and pepperIn a large frying pan melt the butter and fry the onion until golden and transparent. Add the beans and continue frying. Add the rice and cook over low heat for 5 minutes. Add chopped cilantro."There are two lasting bequests we can give our children:One is roots.
