Hi everyone!

This is one of my favorite dishes...it's very quick and makes a great lunch. I have found many uses for the tomato/picante sauce mixture, even without any other ingredients (have even subbed it for enchilada sauce on occasion with great results). I have made this with a variety of beans, added diced green or red peppers...anything works well. You can adjust the proportion of picante sauce to tomato sauce for spicier or milder flavor too!

Quick Chili Pasta

Amount Measure Ingredient -- Preparation Method-------- ------------ -------------------------------- 12 ounces pasta 2 cloves garlic -- minced 1 onion -- finely diced 1 1/2 cups corn kernels 1 tablespoon chili powder 1/2 teaspoon ground cumin 1 1/2 cups kidney beans, cooked -- (15-ounce can) 1/2 cup picante sauce 2 cups tomato sauce -- (15-ounce can) shredded cheddar cheese -- for topping (optional)

 

Prepare pasta according to package directions. In a medium saucepan, sauté garlic and onion in a little water. Add remaining ingredients, bring to a boil, reduce heat and simmer 10 minutes. Top hot pasta with sauce and a bit of shredded cheese just before serving.
