With kindness, Beth Sweet & Sour Tofu 1 pkg Tofu (Firm block is best for this recipe) five cups of vegetables, chopped. (e.g. Carrots, green pepper, cauliflower, water chestnuts, broccoli, etc.) Sauce: 1 cup unsweetened pineapple Juice 6 tbsp brown sugar 6 tbsp apple cider vinegar 2 tbsp soy sauce ¼ tsp garlic powder 1 ½ tbsp cornstarch mixed with 3 tbsp of cold water Chop vegetables into large chunks and tofu into halves. Stir-fry for about 5 minutes. Add tofu and cook until heated through. Push vegetables and tofu mixture to the sides of pan. Combine sauce and pour into the center of pan. Stir constantly until thickened, then toss with vegetable and tofu mixture. Serve over a bed of rice Y!
