Guest guest Posted October 23, 2002 Report Share Posted October 23, 2002 I know somebody asked for a recipe for pumpkin/squash soup before but I haven't seen any postings for it so I thought I'd ask again. I'm inexperienced with soups but absolutely love them of course so any soup recipes would be greatly appreciated I tried out the granola bar recipe using protein powder(half powder and half flour) and they are great. Has anyone tried reducing the sugar? I put peanut butter and chocolate chips in mine so of course they taste more like cookie bars than granola bars. They taste absolutely wonderful but I'm not so sure they'd be very good for me trying to lose weight....guess I better try more of the dried fruit option next time I passed this recipe onto my brother(also a vegetarian) to try the protein powder option and he said he'd actually try it out....that's just amazing. He's such a twig and is trying to gain some weight. He just started lifting weights to try and bulk up alittle but he just naturally has a small build. I hope it helps. *s* ~ P_T ~ Pumpkin Soup 2 medium baking potatoes, peeled and cut into 2 " pieces 1 cup buttermilk 1 Tbs margarine 2 cups canned pumpkin 2 Tbs chunky peanut butter 2 cups low-sodium vegetable stock 1 1/2 cups skim milk 1/4 tsp ground cinnamon 1/8 tsp grated nutmeg 2 tsp lemon juice 1. Place the potatoes in a 2 quart sauce pan; add cold water to cover. Bring to a boil over medium/high heat. Reduce the heat to low; cover and cook for 15 to 20 minutes, or until fork tender. Drain well. 2. Transfer the potatoes to a blender. Add the buttermilk and process until smooth. 3. In a 3 quart saucepan over medium heat, melt the margarine. Stir in the potato mixture, pumpkin and peanut butter; mix until smooth. Stir in the stock, milk, cinnamon and nutmeg; cook, stirring frequently, for 4 to 5 minutes, or util heated through. Remove from the heat and stir in the lemon juice.
