I had never made potato soup of any kind before tonight & thought I'd try this because it was quick. OMG....I haven't even finished the first bowl and I had to sit down and write this. Added a little spoonful of sourcream and sprinkled the top with cheese.....DOUBLE YUM! > Hearty Potato Soup > > 6 medium potatoes, peeled and sliced > 2 medium carrots, diced > 6 celery ribs, diced > 2 quarts water > 1 medium onion, chopped > 6 Tbs butter > 6 Tbs flour > 1 tsp salt > 1/2 tsp pepper > 1/2 cup milk > > In a large soup kettle or dutch oven, cook potatoes, carrots, and celery in > water until tender; about 20 minutes. Drain, reserving liquid and setting > vegetables aside. In the same kettle, saute onion in butter until tender. Stir in > flour, salt, and pepper; gradually add milk, stirring constantly until thickened. > Gently stir in cooked vegetables.
