The recipe book I typed it from states it took first prize in a spinach cookoff at a county fair. After tasting it myself I can certainly see why. Often simple is just better, eh? ;-) Emily's Spinach Salad 2/3 cup vegetable oil 1/4 cup cider or red wine vinegar 2 tsp lemon juice 2 tsp soy sauce 1 tsp sugar 1 tsp ground mustard 1/2 tsp curry pwdr 1/2 tsp salt 1/2 tsp pepper 1/4 tsp garlic pwdr 1 pkg (10 oz) fresh spinach, torn 5 tbs bacos 2 hard boiled eggs, sliced In a jar with a tight-fitting lid, combine the first 10 ingredients; mix well. Set aside. Place the spinach in a large salad bowl. Just before serving, pour the dressing over the spinach and toss gently. Garnish with the bacos and the eggs slices.
