Guest guest Posted October 13, 2002 Report Share Posted October 13, 2002 SPINACH & FETA CHEESE PIE 2 pounds fresh spinach leaves 1/2 cup chopped parsley 1/2 cup chopped fresh dill 2 cups green onions, finely chopped 1 1/2 teaspoon fine sea salt 1/4 cup olive oil 3 cups onion, chopped 1/4 teaspoon ground black pepper 1/2 pound feta cheese, crumbled 16 filo pastry sheets, thawed 3/4 cup butter, melted. Wash and clean the spinach and discard the stems. Drain and shred the leaves. Combine the spinach, parsley, dill, green onions and sea salt in a bowl. Let stand for 15 minutes. Heat the olive oil in a skillet and sauté the chopped onions until soft. Add the spinach mixture and sauté for 3 more minutes. Add the feta cheese and pepper. Butter a large baking dish and place 8 filo sheets in it, brushing each sheet with melted butter. Add the spinach mixture and spread evenly. Top with remaining filo sheets, brushing each leaf with melted butter. With a sharp knife, cut into 4 " x 4 " pieces. Bake in a pre-heated (375F degrees) oven for 30 minutes or until golden brown.
