I make something quite similar, but with more ingredients: 1 can of beans (black or garbanzo, I've even used black-eyed peas), drained 1 can of corn undrained 1 can of tomatoes undrained 1 chopped onion 1-lb bag frozen stir-fry veggies 1 can chopped green chilies, undrained 1 can olives drained 2/3 cup of granulated " Beef (NOT!) " (or Morningstar Farms ground non-beef) Quite a lot of garlic, oregano, parsley, & basil 4 oz sharp cheddar cheese, grated 6-8 corn tortillas Sautee onions until they are just barely soft. Thaw stir-fry mix. In a large bowl mix the onions, vegetables and all the rest of ingredients except the cheese. Put a small amount of the mixture in the bottom of a large baking dish and a layer of tortillas. Put about half of the remaining mixture and another layer of tortillas, pour the remaining mixture over the top. Bake for about 35 minutes at 375 degrees. Top with grated cheese and put back into the oven for another 10 min. This makes a lot but it freezes well and will keep, covered, in your fridge for about a week. This is also great for potlucks because it will feed a lot of hungry people and they won't even notice that it's vegetarian.
