I use tempeh quite a lot, in casseroles, and it makes a great mock-

chicken salad spread. I find mine in either the refrigerator case

where the tofu and other refrigerated vegetarian items are, or

sometimes in the freezer case with vegetarian items. It looks like a

flat, square or rectangular cake of soybeans, with flecks of

black/brown. The types I have bought are packaged in a sort of

plastic shrink-wrap package. I live in Ohio (not necessarily

vegetarian-friendly country) and I am able to find it at large-chain

supermarkets that have a vegetarian section, or a local natural/bulk

foods coop.

Hi Cheryll, thanks for the great descriptions of tempeh and the

recipes too. I have checked all the major supermarkets in my

neighbourhood and not one sells tempeh (though there are shelves full

of tofu!) I have checked 3 health food stores and still no tempeh.

I am going to ask them to bring some in.
