I've been married to an Egyptian for years, he didn't like meat and he was always tellling me it is nearly impossible to find any vegetarian food in Egypt except for fool and falafel. So many vegetable dishes, but everywhere a bit of meat, sometimes easy to leave out, but many times not. Even in the moloheya soup (for the others: moloheya is a kind of greens): they put meat stock. Of course I don't put it when I make it at home, and he said it is good, although very different from the usual kind. I bought many books on Arabic kitchen and found out he was right: even with substitutions, only about twenty percent of the recipes were usable. I searched the net, and again I found only fool beans, falafel and the dish with pasta, rice and lentils. That's all! Finally, I solved the problem by making Indian dishes for him. There I could find tons of vegetarian stuff, of course. My husband is not longer living with us (it turned out that he had a sort of harem, as I discovered much too late) but I am still very fond of Egyptian culture and am trying to learn Arabic in order to be able to teach my chldren. That's why I'm saying I am very curious on what an Egyptian vegetarian would have to offer. Please post whatever you have!
