I for one agree 100%. I understand groups have certain guidelines but

PLEASE, these standards aren't going to determine world peace. I say, if

you don't like it, delete it. Of course, keep in the realm of things.

Don't start posting minced meat pies, LOL. If the recipe is a little bit

long but you like the recipe, then post it. Your not putting anyone out.

 

Here is a recipe that I cook alot that is quick in preparation.

 

Double Corn Tortilla Casserole

 

8 corn tortillas

1 1/2 cups shredded Monterey Jack cheese (6 ounces)

1 cup frozen whole kernel corn

4 green onions, sliced

2 eggs

1 cup buttermilk

1 4-ounce can diced green chili peppers (I use a half can of Rotel)

 

Grease a 2-quart square baking sish. Tear tortillas into bite-size pieces.

Arrange half of the tortillas in baking dish. Top with half of the cheese,

half of the corn, and half of the green onions. Repeat layering with

remaining tortillas, cheese, corn, and onions.

 

(I use extra corn, cheese and onions for each layer. I also spice each

layer with a little salt, cumin and pepper. The original recipe is a little

dull. You may want to try garlic salt and onion powder. Whatever you

like.)

 

Stir together eggs, buttermilk, and chili peppers. Gently pour over

tortilla mixture. Bake, uncovered, in a 325 degree oven about 30 minutes or

till a knife inserted near the center comes out clean. Serve warm. Makes 4

servings.

 

(The ingredients needed for this dish are inexpensive and the preparation is

easy. The preparation is actually child friendly if looking for a family

project.)
