Breadmaking -- help! & Recipe

Last night I made this bread. It is utterlly fantastic -- some of

the best bread I've ever had! I got the recipe off a package of Red

Mill Flax Seeds. I'm crazy about flax seeds, and keep them around

all the time, partly for medicinal purposes.

 

Because I'm allergic to sunflower seeds, I substituted Flax seeds

for them. Because I know flax seeds are loaded with Omega 3, but

you can't access it unless you grind them, I ground my flax seeds up

on the blender. The bread rose some, then fell. I did measure

everything carefully, and put things into the breadmaker in the

right order. All the ingredients were brand new, organic, and Bob's

Red Mill... which is what the recipe suggested.

 

Do any of you breadmakers have a suggestion for how I can do this?

Because even though it fell, it's incredibly yummy and I want to

make it again... but next time have it not fall. I'm wondering if

my grinding the seeds up made my measurement way off? Would it work

if I measure first, then grind? I didn't want to do that because

there's always some left in the bottom of the blender I can't get

out. Help! -- Melinda

 

THREE SEED BREAD

 

1-1/4 cups water

2 Tbsp. honey

2 Tbsp. canola oil

2 cups Bob's Red Mill unbleached white flour

1 cup Bob's Red Mill whole wheat flour

1-1/2 tsp. salt

1/3 c. Bob's Red Mill flax seeds2 Tbsp. sunflower seeds

1 Tbsp. poppy seeds

1 tsp. active dry yeast

 

Directions:

 

Add ingredients to bread machine in the order recommended by the

bread machine manufacturer and select the basic bread cycle. Let

cool completely on a wire rack before slicing.

I've had the same problem at times, bread not rising high enough when I add seeds or dried fruit.

The thing I do is add more yeast when the dough might be heavy. One tsp. of yeast is less than what you get in one of those little packages, I think they are 2 1/2 tsp., I'd add that amount. I also have found that due to high humidity, I sometimes have problems. I often use the quick, Rapid yeast instead of the regular. That always gives a good rise.
