Guest guest
There are many ways to cook the eggplants for the eggplant puree dip. What we call grill here in Greece I suppose is the broiler thing. The hot rods under the roof of your oven, that can burn things in one minute if you are not careful. The one you use for pizzas or for open toast (bread slices with melted cheese on it). Another option is to put the eggplant directly on the dark rounds of your electric cooker (sorry, I don't find the name right now, but it's where you put the pans on), perhaps with a little aluminum foil so as not to make it difficult to clean it afterwards. But the very best smoky flavour is achieved on coals. Irene

Yes, what you described is what we call " broil " . Thanks. > Another option is to put the eggplant directly on the dark rounds of your electric cooker (sorry, I don't find the name right now, but it's where you put the pans on), Electric burner. I've never cooked anything directly on the burner without a pan. Interesting. Thanks, Irene! Melinda
