Guest guest Posted September 19, 2002 Report Share Posted September 19, 2002 Apples are at their peak right now. This is wonderful with crisp Macintosh apples, or if you must, Granny Smith. I have been fortunate a few times to live near friends with wild apple trees. Of course, I made them a loaf like this in thanks for sharing their bounty. 2 cups packed coarsely-grated tart apple 3 Tbs. fresh lemon juice 1/2 packed cup light brown sugar 4 Tbs. melted butter 1 lrg. egg, beaten 1 cup unbleached white flour 1 cup whole wheat flour 2 tsp. baking pwdr. 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. cinnamon 1/4 tsp. vanilla extract Optional: 1/2 cup finely chopped nuts Combine grated apple and lemon juice. Beat together sugar, butter, and egg. Combine with apple. Sift dry ingredients together in a mixing bowl. Make a well in the center and pour in the apple mixture. Add vanilla and nuts if you so choose. Stir until positively combined. Spread into buttered loaf pan.
