Peanut butter soup

Hello everyone! I just joined and have been reading the recent

archives. I saw someone's plea to only post recipes that we have

tried. I have the soup below almost every morning. I think you can

say I not only tried it, I loved it :-)

 

 

2 cups water and 1/2 of a Knorr's veggie bullion cube (or just use a

can of veggie broth)

1/3 c. Beef " not " soy granules

1/2 c. cooked brown rice (or a couple of corn tortillas chopped into

1 " squares)

1 heaping tablespoon crunchy peanut butter

1 teaspoon of worchestershire sauce, vegan if you can find it

1 teaspoon hot sauce (or to your taste)

1 tablespoon lemon juice

 

Add the veggie bullion, the soy granules and the rice to the

simmering water and let it boil gently for about five minutes. Pour

into a large bowl and add the peanut butter, worchestershire sauce

and hot sauce and stir until the peanut butter is dissolved. Add the

lemon juice which will turn it all creamy.

 

Obviously this is wonderful in winter. However, in summer I usually

drop in an ice cube or two, just before eating, because it's also

wonderful just warmer than room temperature.
