Guest guest Posted September 15, 2002 Report Share Posted September 15, 2002 Blender Broccoli Soup 10 oz frozen broccoli, thawed 3 T. flour ..5 tsp. dried basil ..5 tsp. salt 1.5 tsp. pepper 1.5 cups milk ..5 cup water ..5 cup grated swiss or cheddar cheese Combine broccoli, flour, salt, pepper, basil & 1 cup of the milk in blender. Blend 30 seconds. Pour into pot with .5 cup milk and cook to boiling, stirring often. Add water to blender and whir. (this cleans your blender and the bowl). Add to soup. Boil and then heat on low, simmer for 2 minutes. Remove from heat and stir in cheese. 2-4 servings. I usually wait until after the soup is in the bowls and slightly cooler and then add some more cheese. Then the cheese doesn't totally melt in and mmmm.... I've got my entire family addicted to this. My little 9 year old sister loves it when I sprinkle in the extra cheese. And even my 13 year old, meat-loving brother will eat it.
