Guest guest Posted September 8, 2002 Report Share Posted September 8, 2002 Fried Vegetables and Rice 4 Servings Preparation: 10 mins Cooking: 8-10 mins 100g (4 oz) stir-fry rice noodles 3 tbsp sunflower oil (or use spray oil to decrease the fat content further) 1 garlic clove, crushed 1 tsp finely grated ginger 8 spring onions, finely sliced 2 carrots, peeled and cut into thin matchsticks 100g (4oz) mangetout, cut into thin strips 1 red pepper, de-seeded and cut into thin strips 2 tbsp soy sauce Soak the noodles in boiling water for 4 mins, then drain well and set aside Heat the oil in a large non-stick frying pan or wok, ad the garlic, ginger and spring onions and stir-fry for 1-2 mins Add the carrots, mangetout and red pepper and stir-fry for another 2-3 mins Finally add the noodles and soy sauce, mix well and serve in shallow bowls.
