Oh, my gosh this is an old email in my " reply at earliest convenience " box...

 

But here's *my* recipe, which was originally carnivore-ific from a genuine

Baton Rouge deb.

 

Crockpot Red Beans and Rice

(A genuine Louisiana Recipe)

 

1 Bag Red Beans (1 lb.)

1 whole bulb garlic, separated into cloves and chopped *

1 chopped red onion *

1 chopped yellow onion *

1 chopped green bell pepper

1 cube bouillon of choice, some broth powder, or 1 c. veggie broth

3 whole bay leaves

1 T garlic powder *

1 T black pepper *

Salt to taste

optional: 1 lb veggie sausage, cut into pieces (I hate sausage of any

variety, so I don't use it. If you want it, look for something

approximating keilbasa or andouille sausage.)

 

* Use less if a milder dish is desired.

 

Rinse and sort beans. Put the first 10 ingredients in crockpot on medium

(may differ depending on your crockpot...) with enough water to cover. Let

cook on high for 10 hours (I usually start it in the morning for

dinner--even easier if you cut the veggies the night before.)

 

Brown the sausage then add to crockpot. If you would like a creamy

texture, mash up a cup of the beans with a fork and then return them to the

pot. Cook with the top off for a while (generally during the 20 min. it

takes me to make rice!) and it will thicken.

 

Serve over hot rice. I usually make corn bread or biscuits and serve with

some fresh veggies (carrots make a great contrast) and lots of ice water.

Yum! That sounds wonderful, Katy. Now that the days are getting a bit cooler

I know I will be making more " comfort food " like this. Thanks for posting it.
