Quick Tamale Squares 3/4 cup cornmeal 3/4 cup flour 1 tbsp sugar 3 tsp baking powder 1/2 tsp salt 1 cup water 2 eggs or substitute 1 lb ground beef or meatless crumbles 1 tbsp chili powder 16 oz jar of salsa 1 1/2 cups shredded cheddar or soy cheese 1 cup fresh or frozen cooked corn Preheat oven to 450 degrees. Lightly spray at 12x8 inch baking dish. Combine cornmeal, flour, salt, sugar, baking powder, and chili powder in a mixing bowl. Add eggs or substitute and water. Mix well. Add meat or crumbles, salsa, 1 cup shredded cheese and the corn. Mix well. Pour out into the prepared dish. Bake for 20 minutes, top with remaining cheese. Bake for an additional 5-10 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving. Serve in lettuce leaf cups with more salsa. Note: I used egg substitute, soy cheese and meatless crumbles.
