I have not permitted meat eating to anyone.' The Buddha, Siddhartha Gautama. 'He that kills an ox is as if he killed a man.' Hosea 6:6. 'We, the Christian leaders, practice abstinence from the flesh of animals. The unnatural eating of flesh-meat is polluting.' Mohandas Gandhi Tomato Pesto Toasts Serves two 2 thick slices crusty bread 3 tablespoons cream cheese or fromage frais 2 teaspoons red or green pesto 1 beefsteak tomato 1 red onion salt and freshly ground black pepper chopped basil, to garnish 1Toast the bread slices until golden brown on both sides. Let cool. 2Mix together the cheese pesto in a small bowl until well blended, then spread thickly on the toasted bread. 3Using a large, sharp knife, cut the tomato and red onion crosswise into thin slices. 4Arrange the tomato and onion slices, overlapping, on the toast and season with salt and pepper. Transfer to a broiler rack and heat through under a hot broiler. Serve, garnished with chopped basil. COOK'S TIP: Almost any type of crusty bread can be used for this recipe, but Italian olive oil bread and French bread will give the best flavor.
