These involve some complicated setups with cheesecloth, heavy pans, plates, etc. My instructions are pretty simple: 1. Wash your hands well. 2. Take the frozen (thawed) tofu and squeeze the bejabbers out of it with your bare palms. It will feel like a dish sponge. Provided you don't squeeze too hard or use your fingers, it will maintain its shape. I have a great recipe for mock " toona " that I will post later. It uses frozen, then thawed, then crumbled tofu.
