What I do with the excess is this: I shred it, unpeeled,

using my food processor. Then I freeze it in plastic bags,

for later use in zucchini bread or the veggie burgers -

whatever.

 

I did this last year. I didn't blanch it. It kept

perfectly, I used most of it, and just threw away the last

couple of packages when this year's zucchini started coming

in.

 

It's watery when it thaws, so you need to squeeze it with

your hands or drain it in a colander for a little while, but

then it's fine for zucchini bread, or the burgers, etc.
