Guest guest Posted August 20, 2002 Report Share Posted August 20, 2002 This is a recipe I adapted from the one in the Enchanted Broccoli Forest cookbook, which called for quite a tedious process and playing with filo dough. I still bother with the original recipe when I have time or am having company over and want something special. But when it is just me and the regular crew, I make mine like this with very good results. *s* 1 loaf of garlic bread (the kind prepared in stores and sold in foil baking bags) 2 or 3 tomatoes 1 pkg Popeye spinach 1 small chopped onion 1 Tbs. lemon juice 1 Tbs. butter 1 or 2 cups bread crumbs shredded cheese 1 pkg. feta cheese crumbled sliced black olives ***whatever toppings you enjoy*** I often add some marinated artichoke hearts and fresh mushrooms. ~Separate the halves of the garlic loaf and place on a foil lined baking sheet. ~Take the spinach and saute in the butter and lemon juice with the chopped onion. Let all the moisture get reduced and allow the onion to soften a bit. ~Spread this spinach mixture on the bread halves. ~ Thinly slice the tomatoes and then dredge them in the bread crumbs coating both sides. Arrange these on top of the spinach layer. ~Scatter the black olives and whatever toppings you enjoy. Then crumble the feta cheese over all. Follow with whatever other cheese you like. ~ Bake at 350 for a half hour or until the feta crumbles have slightly browned tips. Slice and enjoy.
