This has eggs, cheese and milk in it but some of you might like it. We are not truly vegetarians, but are edging in that direction and we really liked this.

 

Rice-Broccoli Quiche

1/4 cup chopped Onions1 10 oz. package frozen broccoli1 1/2 cups cooked brown rice3/4 ounce sharp cheddar cheese, divided1 egg, lightly beaten1/2 teaspoon salt, divided olive oil cooking spray2 eggs, lightly beaten1/4 cup skim milk1 2 ounce jar sliced mushrooms1/4 teaspoon pepperCook onion with broccoli according to package directions, omit salt and fat. Drain. Combine rice, 1/2 cup cheese, 1 egg and 1/4 teaspoon salt. Press evenly over bottom and sides of a 9 inch pie plate coated with cooking spray. Combine 2 eggs, milk, mushrooms, 1/4 teaspoon salt, pepper, and broccoli mixture. Pour into prepared crust. Bake at 375 degrees for 20 min. Remove from oven and sprinkle with remaining 1/4 cup cheese. Bake an additional 10 min. Let stand 5 min. before slicing.
