Birthday cake for Susi :-)

Food is usually eyed suspiciously by relatives at our house too, but

nobody said a word about this cake I made for my son's birthday, in

fact they all pigged it down along with chocolate tofutti, and said

it was good! It is sort of vegan in that there's no dairy/eggs, but

it does call for white sugar & conf. sugar.

 

By the way, the recip is easy to cut in half for a small cake, just

make half, use one layer pan, and cut the layer in half. Or 2 loaf

pans would work.

 

I got this quite a while ago from a book called the Vegetarian Child -

sorry the author's name escapes me at the moment.

 

Chocolate Brownie Cake

 

1/2 c. whole wheat flour

2 c. unbleached flour

1 1/2 c. sugar

1/2 c. cocoa

2 tsp. baking soda

1/2 tsp. salt

2 c. water

6 T. canola oil

2 T. vinegar

1 tsp. vanilla

 

Glaze:

1 c. confectioners sugar

3-4 T. cocoa

2-3 T. soymilk

 

Set oven to 350F. Grease and flour 2 8-inch pans. In a large mixing

bowl mix together dry ingredients. In a separate bowl blend wet

ingredients. Pour wet ingredients into dry, stirring until combined.

Pour into pans and bake about 35 minutes, until tests done. Cool 10

minutes and remove to wire rack to cool completely.

 

When cool, place one layer on cake plate. Cover with glaze, top with

2nd layer and spread remaining glaze on top, allowing it to drizzle

down the sides.

THANKS! Sounds great. I will ask my mom if she approves of the ingredients, and if not I will bake 1/2 for Steve and me.
