Guest guest Posted August 16, 2002 Report Share Posted August 16, 2002 Roger that, but pardon my imprecise recipe, we tend to wing it here. Okay, I used LightLife steak style strips. Check www.lightlife.com for their product line and suggested recipes. We heat some olive oil, sautée a few cloves of garlic, a medium onion chopped with the grain, (you want longer, new-moon shaped pieces, not cubes), and a bell pepper cut into thin strips. (The bell peppers can make it very colorful, by the way.) To this add the steak strips and a cup or so of marinara sauce. You're not making sauce, just want the red stuff all through it, so be sparing until it's right. Season to taste with black pepper or any TexMex seasoning you prefer. Serve in a tortilla and add a few shreds of your favorite cheddar cheese item. (We keep ours Vegan.) You can also serve this over rice, or add some rice to the tortilla. Any way you do it, it's yummy, simple, quick, and as Vegan as you want it to be. My wife put a bit of jalapena pepper into it, too, for some zing, but this is entirely a matter of taste. I went to the web site and found a store in my town that carries Lightlife products.
