Another one of my recipe inventions that makes use of potato flakes because i'm too lazy after work to go down & buy some to boil & cut. :-)

EASY CREAMY POTATO LEEK SOUP

 

1 large leek

1 c. potato flakes

2 c. soy milk

2 c. water

season to taste

 

Chop leeks into small pieces & saute in water in a pan until soft. In a food processor put potato flakes, soy milk, & leeks & blend until fairly smooth & leek pieces are pretty chopped up. Pour mixture into a sauce/soup pan & add 2 c. water (or more soy milk if you want creamy). Stir & heat through on medium-medium/high heat until heated through. Season as desired. I used a salt-free garlic seasoning, but some may find it too bland & might want to add some salt.

Megan your recipe reminded me of some of the " cream " soups I make! I

use a combo of veg. broth/soy milk/potato flakes added to pretty much

any cooked vegetable to make a great " cream of (whatever) soup " . If

you haven't tried it, do so! It's easy, dairy free, and tastes very

good. One of the few good uses for potato flakes I think!
