Guest guest Posted July 31, 2002 Report Share Posted July 31, 2002 Another one of my recipe inventions that makes use of potato flakes because i'm too lazy after work to go down & buy some to boil & cut. :-) Megan EASY CREAMY POTATO LEEK SOUP 1 large leek 1 c. potato flakes 2 c. soy milk 2 c. water season to taste Chop leeks into small pieces & saute in water in a pan until soft. In a food processor put potato flakes, soy milk, & leeks & blend until fairly smooth & leek pieces are pretty chopped up. Pour mixture into a sauce/soup pan & add 2 c. water (or more soy milk if you want creamy). Stir & heat through on medium-medium/high heat until heated through. Season as desired. I use a combo of veg. broth/soy milk/potato flakes added to pretty much any cooked vegetable to make a great " cream of (whatever) soup " . If you haven't tried it, do so!
