I work one full time job and 3 part time jobs, so needless to say,

time is a valuable commodity. This recipe is so easy and fast its

almost too good to be true. If you are lucky enough to have a store

that carries " Flavorite " brand frozen veggies, there is a blend

called " Flavor Fiesta " . It has broccoli, carrots, pimentos and a

bunch of different beans, garbanzos, kidneys, white and italian green

beans. Almost a complete nutritional meal in itself.

Anyway, I just take half a package of that, throw it into 4 cups of

boiling water, mix in 4 cups of instant rice (you can take longer and

use any kind of rice) a can of diced tomatos and a package of taco

seasoning mix. Wait 5 minutes for the rice to soften and its done!

For my son, who is 17 and " needs meat! " lol, I cook some hamburger on

the side, separate the rice when done and add the meat to his share.

I used to use " Ground Meatless " from Morning Star till he saw the

package one day and realised what I was doing to him. lol

Everyone have a happy 4th of July. Minnesota has finally made

fireworks legal so Im gonna have fun tonight! (now if they would just

lighten up their attitude and let us buy real beer in grocery stores.

lol)

Take care, caryl
