This is something you can make vegan or vegetarian....I didn't know which one you were. This dish is good to non-veggies as well as veggies,. It won't be the out of the ordinary type thing; it can also be used as a main meal or as an appetizer

Four Layer Mexican Dip

1 packege of spanish or mexican rice mix1 can of refried beans 1/4 cup sour cream or plain yogurt1/4 cup shredded cheddar 1/4 cup shredded monterey jack cheese 1 small red bell pepper, washed, seeded, and chopped seeded chili peppers, to taste sliced black olives 1 tomato, diced into small pieces garnish: additional shredded cheese, cilantro

 

1. Cook rice package to instructions. Spread mixture in the bottom of a pie plate. 2. Meanwhile, warm beans in the microwave or in a separate saucepan and stir until softened enough to spread. Put over rice in pie plate. 3. Combine the sour cream or yogurt, shredded cheddar and Monterey jack cheeses together. Spread over beans. 4. In a small bowl, mix the chopped red bell pepper, seeded chili peppers, black olives, and tomato. Mix gently and spread over cheeses. 5. To garnish, sprinkle a little more cheese or cilantro over the top. Right before serving, pop into a 350°F oven for 10 minutes. Let sit for 5 minutes and serve with large "restaurant syle" tortilla chips or scoop-style corn chips.
