Dinner party recipes?

What do you like to serve to meat-eating guests? What fills them up and

doesn't make them squirm about eating veggie?

 

I often use a mushroom pie (I'm pretty sure I've posted it before), but 1) I

don't have all the ingredients and I'm serving guests before I go to the

store again, and 2) some ppl won't touch mushrooms and green peppers, even if

they're vegetarians.

 

So, aside from my other favorite (Chili, but then ppl complain about eating

beans, iykwim?), any suggestions for a casual gathering with children?

We do weekly potlucks. Obviously, I get a lot of practice on feeding

carnivores. Some quick suggestions:

 

quesadillas: tortillas, cheese, and fillings of your desire. If you're

interested, I have good recipes for spicy spinach-artichoke filling, and

black bean and goat cheese. (And make some plain ones for the kids.)

 

quiches: If you use a store-bought crust (or make a crustless quiche),

these are really quick.

 

pizza/calzones

 

" breakfast for dinner "

 

fettucine alfredo/homemade mac 'n cheese

 

pad thai (w/ tofu or scrambled egg)

 

mediterranean mezze (selection of mediterranean appetizers--hummus, baba

ganouj, taboulleh, fatoush, etc. veggie grape leaves if you have time.)

 

And a lot more (but my kids are fighting...) Let me know if you want

specific recipes!

I don't know if anyone has put in a request for this, Katy, but my Mom would

love this dish. May I please have the recipe so I can make it for her?

Here's something that would be pretty easy to make. It's a recipe from a

pkg of Tofurkey deli slices, for tofurkey rollups.

TOFURKY DELI ROLLUPS

 

8 oz cream cheese

1/4 c. chopped red onion

1-2 chopped jalapeno peppers

4 oz. chopped olives

1 pkg, tofurky deli slices (hickory smoked variety)

wheat tortillas

 

1. Mix cream cheese, onion, jalapeno and olives.

2. Spread mixture on tortillas.

3. Cover with Tofurky hickory-smoked deli slices.

4. Roll tortillas into tube shape and cut into 1-inch pieces.

I would think your best bet would be to go Italian. Salad and garlic

bread are musts! Then either make lasagna, baked ziti or stuffed shells.

Or you could do eggplant parm with pasta on the side.

What I've done is make individual pizza or strombolis. Have a bunch of

toppings and each person can say what they want in theirs or on top. Most

kids will want it plain of course. Then just bake for 20 minutes and done.
