Greetings all.

 

I'm new to the group and wanted to say Hello to all.

 

I am also in transistion from being a meat eater to a more varied

veggie style diet.

 

Since I have past the 40 yr mark, my body has really started to

change in many ways. My digestion is one of the first major changes.

It seems my tummy has negative reactions to the ingestion of red

meats and pork. I can still eat chicken and turkey without much

discomfort so I do still eat those meats, and we have added alot of

white meat fish to our diets. I am seeing less tummy trouble and

more energy and hubby is beginning to see gradual weight loss and

less trouble with his gall bladder, which I believe will have to

come out soon, as it is.

 

Finding this group is great. I have been looking for quick recipes

that are also tasty. My family's lifestyle dictates that we eat on a

hurried schedule or on the run at times, and I really wish to keep a

good healthy diet in motion. While we are not particularly fond of

tofu just yet, finding new ways to present and serve the variety of

veggies we have to choose from is exciting and fun, and also a tad

daunting from time to time.

 

We live in the central southeast US so getting out the 'southern'

cooking routine and into the veggie routine is a challenge, but it

is a fun one.

 

I look foreward to sharing with all of you.

Heh. So maybe you can teach me how to use the black-eyed peas and various

greens that come from my veggie Co-op box? Compared to that, quick

vegetarian cooking seems a cinch to me!
