I'm 26 yrs old, happily married to Jim (he's 38 -- but claims he can change his eating ways ;-), and we are the homeschooling parents of three wonderful children: Charlotte " Charli " is 6, Bethany is 4, and James is 2. Their only food requirements are that someone feeds them. They are NOT picky at all so I'm lucky in that regards! OTOH I'm incredibly picky and trying not to be.. I don't like onions, tomatoes (other than sauce), cooked peppers, or mushrooms. Salsas and other commonly used vegetarian ingredients just don't work for me. I was an ethical vegetarian for 2 years (14yrs old - 16 yrs old) and now I'm approaching it from a health standpoint. DH & I are both looking to lose some weight and improve our health so we are using Dean Ornish as a guide. However I realized yesterday (at the grocery store) that I was in trouble. Gone were all of my old standby recipes.. and here was a baffling case of " What's for dinner??? " . What I am looking for now are very low fat vegetarian dishes using no oil or nuts. I'd also like to avoid onion based (but can use onion flavoring) and salsa ingredients. I'm REALLY trying to LIKE these foods, but it's a slow process. A few years ago I convinced myself I like broccoli and carrots and that worked. I think my onion dislike has grew to phobia and might need therapy to cure hehehehe Oh. I would also LOVE to learn more about using beans. I'm trying to keep our grocery costs low. Maybe they could be adapted without too much trouble and that would give you a place to start. There seems to be more and more meat substitues available these days. Do you like any Mexican dishes? We use mashed beans instead of hamburger and it works very well for us. There are many varieties of bean soup.
