Guest guest Posted June 5, 2002 Report Share Posted June 5, 2002 I found this in an old Vegetarian Times Magazine in a waiting room somewhere... sorry, can't remember which issue! This is from memory, so I may have inadvertantly changed it a bit from the printed version This was quick and easy and good. Definately different too! I topped mine with salsa, but I bet tomato or spaghetti sauce would be just as good. *Zucchini & Corn Pancakes* 2 medium zucchinis 2 cobs of corn (or try using one cup of frozen or canned corn) 1/2 cup milk or soy milk 2 eggs, or egg equivalent 1 cup flour (I use unbleached - I bet whole wheat would be good) 1 teaspoon baking powder Spices to taste... try cayenne pepper, garlic powder, pepper, salt, oregano, thyme, whatever you like! Shread the zuchinis and cut the corn off the cobs. Combine well in a mixing bowl. You can either bake these in the oven at 350*, or fry them in a skillet on medium-high heat. Either way, just spray some olive oil on each side so they don't stick. Flip halfway through cooking. Cook until they are done in the middle. I tried cooking both ways.... they both work equally well. I put some shreaded cheese on the oven version, that was good too. I like to eat them with homemade mango salsa: diced mango, onion, jalepeno, red or green pepper, cilantro, maybe a little lime juice. It is very good, definately worth making!
