I had this for dinner last night - it is our favorite because it's good and very quick! No heating up your kitchen with this one! *Bean Burritos* Flour tortillas (10 " work well) 1 can vegetarian refried beans green onions, chopped salsa sour cream (optional) cheese (optional) Heat the beans in a bowl in the microwave for 2 minutes, stirring at least once. Heat each tortilla for about 10-20 seconds in the microwave. If you are using cheese, sprinkle that on the tortilla first so it can melt a little. Spoon a strip of beans onto each tortilla (about 1/4-1/2 cup) Sprinkle with the green onions, spoon some salsa and some sour cream on. Fold one side, then fold up the bottom, then roll the rest up. MMM! Quick and good! Then for dessert. We are trying to cut some fat out of our diet, so there goes ice cream! Instead, get some vanilla yogurt. Check to make sure there's no geletin in it if you are vegetarian. We use Dannon vanilla yogurt in the bigger containers. Then, mix in a teaspoon of your favorite jam or jelly and your favorite fresh fruit. Last night I used homemade rhubarb/cranberry jelly with a bunch of fresh blueberries. This weekend, we cut up fresh strawberries, golden apples and blueberries. I promise you won't miss the ice cream! This is a good hint for those of you who don't eat geletin, but also don't like plain old vanilla yogurt. (Ever notice all/almost all the flavored yogurts have geletin? Why is that! I didn't eat yogurt for years before I figured out I could make my own flavors!) This also makes a great breakfast.
