I have a friend who has done it stovetop, but she did add more water as the cooking liquid diminished and says next time she'll add the veggies after an hour or so of simmering the beans and barley in the stock. Crockpots tend to keep the liquid, so this wouldn't be a big concern. I would guess you could saute the onions and garlic real quick and put them and the rest of the ingredients in your crockpot and cook on low for 8 hours or high for 4 (seems like the common times for bean/grain recipes). Veggies could be added last if you want them to not get too soft. The pressure cooker holds the flavors (and nutrients) in and the beans and grains cook completely and hold their shape without overcooking the veggies.
