Those Boca Italian Sausages might be salty but very tasty! Next time I think I'll only use 3 sausages instead of 4. Thanks Gloria for the recipe. Italian Sausage Stew 4 Boca Italian Sausages, sliced 1/2 tsp. dried basil 1 clove garlic minced 1/2 tsp. dried oregano 1 small onion 1/2 lb. fettucini, partially cooked 3/4 cup red wine 1 green pepper chopped 1 can whole tomatoes 3 tbsp. fresh chopped parsley 2 1/2 cups veg. broth or water (unsalted) salt and pepper to taste 2 or 3 veg. bouillon cubes In a large pot, cook sausage (in oil) over medium heat until brown. Remove and drain on paper towels. Cook garlic and onion in the same pot for 2-3 min. Stir in tomatoes, wine, broth, basil and oregano. Bring to a boil, then reduce heat and simmer uncovered 30 min. Stir in zucchini, partially cooked fettucini, bell pepper, parsley, veg. cubes, and the sausage. Cook 25 min more. Add salt and pepper to taste.
