Guest guest Posted May 13, 2002 Report Share Posted May 13, 2002 As I am lactose intollerant, I only eat non-fat or low-fat yogurt as my milk... I recently had my cholesterol checked and it was really low. Really, the easiest thing for me was to avoid cheese all together. No fake stuff, it is expensive anyways and just reminds me of what I'm missing. I eat Pad Thai, a yummy low fat food of Thailand, and stir frys... Here's what I do. I buy whatever veggies look good that week, chop them up small and put them in the fridge. Then, I cook rice in my rice cooker or boil soba noodles, stir fry the veggies I have with Mrs. Dash Hot and Spicy and some soy sauce and maybe some vinegar, like rice or cider or maybe a bit of wine. Add some thin sliced tofu and brown it, put it on the noodles and it is so yummy. Another thought is, instead of focussing on what you can't eat, make it an adventure to figure out what you can. Veggie meals aren't all steamed veggies and brown rice... Inlist each family memeber to find a recipe from an ethnic group that fits the criteria of your new diet. Then, make it a family event cooking and trying out the new foods. It could be great fun and good for you. Good luck!
