Guest guest Posted March 18, 2002 Report Share Posted March 18, 2002 hey all i just signed up and wanted to say hi. I'm not officially vegetarian although I'd like to take the leap. As a college student it is often VERY hard to find good vegetarian food, especially on campus, so i usually don't eat there However, I eat a lot of stuff from the company Fantastic Farms (i think that's right) and like to experiment and make different stuff out of the veggie burger mix they sell, which a single box can last a long time for the money and doesn't take too long to prepare. One of my favorite things to do with the veggie burger mix is to make it as usual but instead of patties, break it up so it resembles ground hamburger (better smell though). Then cut up about 2 cloves of garlic and a slice of onion and toss that in. when all that is done warm up some pita bread and stuff the pita with the burger stuff. Add salsa, olives, and cheese(I usually use the Cabot's White Sharp Cheddar, unfortunately I can only find it at Wal-Mart... or if you don't eat dairy you can substitute it with soy products, which i haven't tried but imagine it would taste pretty good as well). I usually make the whole box at once and then use only some of the mix and pack the rest away so I only have to heat it up the next time i want to use it.
