As I live alone, I try to eat, sometimes it is hard though. So,

recently I discovered that if I chop up the veggies and put them in a

bowl in my fridge, I'll be able to use them all week. One night I'll

make a batch of brown rice in my rice maker and keep that in the fridge

too. Then, fried rice: pre-chopped veggies, Mrs. Dash seasoning,

olive oil, all sauted. Then, add in the rice, cook until warm, add an

egg and cook until done. Add some soy sauce and instant dinner. Or,

I'll cook the veggies and add a can of diced tomatoes and eat it on

pasta. My veggies include zuchini, yellow squash, peppers, onion,

mushrooms, brocolli... whatever is cheap and I like. I've discovered

that the veggies keep really well and that I eat so much better this

way. Of course, no doubt I'll go through this phase too, but for

now...

 

One comment on organic foods, they probably have more nutrients than

regular foods as the soil isn't exhausted yet. But, yes, normal foods

probably are lower in essential nutrients, like calcium, than they

should be due to the soil that they grow in. I take vitamins, raise a

few veggies in a tiny garden and eat organic when I can. It only

makes sense to me...
