I keep this list posted on my fridge for those days where I can't even think! Top 10 LIst of No-Time-To-Cook Meals 1. Spaghetti: Boil up a pot of noodles. Open a jar of pasta sauce, heat it in a saucepan with a handful of frozen mixed vegetables. You will be eating in minutes. 2. Vegetarian Soup: Use leftover cooked pasta or rice, and frozen peas to turn a paper cup of packaged soup into a hearty meal. 3. Salad: Prewashed greens and bottled dressing are a quick fix. 4. Chili: Open a can of vegetarian chili, and add frozen corn. Heat and serve sprinkled with chopped fresh cilantro. 5. Tacos: Warm a tortilla on a heated, dry skillet (I use a micro for 15 seconds); add canned vegetarian refried beans, lettuce, tomato, and salsa. Fold and eat. 6. Pizza. Make a gourmet pizza in minutes. Spread a ready-made frozen pizza crust with canned pizza sauce (a 4-oz can of tomato sauce seasoned with 1 tsp dried oregano (I use Italian seasoning) works beautifully, and it's cheap). Top the sauce with a jar of marinated artichoke hearts, thin onion slices, olives and bell pepper rings. Scatter feta and mozzarella cheese on top, and bake according to pizza crust directions. 7. Barbecued Potato: Cut 2 red potatoes into 1/2-inch cubes. Put them in a microwaveable dish with 1 tbsp of water. Cover. Cook on HIGH in a microwave for about 6 minutes, or until they are tender. Remove the lid, and spoon on several Tbsp of prepared barbecue (or pasta)sauce. Cover, microwave 30 seconds. Remove from oven, sprinkle with Parmesan cheese and eat. (I like olives with my pasta sauce one and I cook diced onions with the potatoes with the barbecue.) 8. Baked Potato: Turn a baked potato into a " taco " with canned beans, salsa, and grated cheese, or pour prepared vegetarian soup over the potato for a quick-fix gravy. If you like your potatoes creamy, mix yogurt with tahini and spoon it over the top. 9. Rice Pilaf: Open a jar of salad dressing and drizzle it over cooked rice sprinkled with seasoned tofu. (I sometimes add veggies (thawed frozen or drained canned.) 10. Burger: Buy a box of frozen veggie burgers. Layer a bun with fresh lettuce, tomatoes, and sliced onions.
