cream cheese enchilada

Had these for dinner tonight. Easy prep and very good.

 

1 block of lite cream cheese

1/2 cup scallions - chopped

8 oz. cheddar - shredded

tortillas

8 oz. favorite salsa

 

Preheat oven to 350

 

Soften the cream cheese and blend with electric mixer. Add and blend the

chopped scallions and 1 cup of the cheese. Roll about 1/4 cup of mixtureper

tortilla and lay in a baking dish. Pour the salsa over and top with rest of

cheese. Cover and bake for 25 minutes.
