I was really happy to find this one, and have made it several times. It uses spinach leaves instead of basil. For those of you watching oil- intake, I've also found that the quantity of oil can be reduced, start at 1/2 cup and then just keep adding it until it reaches a taste/consistency that you like! Spinach Pesto Adapted from Vegetarian Times Dec 2001 Raw organic baby spinach leaves - 12 oz 3 cloves fresh organic raw garlic, minced 9 tbsp organic raw sunflower seeds 1 cup walnuts 1.5 cups olive oil 6 tbsp dried basil 3 tbsp dried oregano salt to taste Blend everything together and enjoy!
