I think that alot of the recipes that are posted to non-vegetarian lists could be converted into vegetarian recipes. However, I'm a beginner cook, and not very creative, AND a fairly new vegetarian who doesn't know much about substitutions. Can anyone give me some suggestions on how to convert some of these recipes? I've seen alot of recipes that use ground beef, and I've had alot of luck converting those, because I discovered " crumbles " in the grocery store. But what about chicken - mostly recipes that use chicken breasts? A few times, we bought the wheat gluten chicken that is cut into strips. But it's like 5 bucks a box! Thanks in advance! Guest guest Posted February 23, 2002 Report Share Posted February 23, 2002 I'd like to recommend Lightlife's " Smart Recipe " Chick-n-Strips (I think that's what they're called) if you can find them. They are the most realistic substitute I've found. They are not cheap - about $2.89 for a 6 oz. package, but the trick is to use meat substitutes as a " garnish " or additive, and not the " centerpiece " of the meal. I divide the package in half and it lasts for 2 meals (there are 3 of us eating). The flavor of them is pretty good, slightly smoky but not overwhelming, and they cook up great in every recipe I've tried.
