Recipe has some minor vegan modifications, & surprisingly it tastes like the real thing. The oil can be left out for a low-fat version. Great source of protein. Megan TOFU MAYONNAISE 1-1/2 pounds tofu (i use soft) 2 T. tahini 1 t. dill seed (i used dill weed) 1/4 c. cider vinegar 2 T. prepared mustard 1/2 t. turmeric (optional) 1/4 c. maple syrup (original recipe called for honey) 1/3 c. oil salt to taste Blend all ingredients in a blender. Add water, if needed, to desired consistency. Adjust the seasonings to suit your taste. Variation: For spicy tofu mayonnaise, add 1/8 c. wasabi powder, 1 drop chili oil, and a few drops tamari (or soy sauce) to each 1/4 c. of tofu mayonnaise. The author prefers making sandwiches with the tofu mayo & sliced veggies. I have a little sandwich maker (kinda like a george foreman grill or waffle maker) & I take four slices of whole wheat bread & use the tofu mayo as a filling.
