It comes from a 1998 issue of Canadian Living magazine. Everyone who has ever tried it has loved it. And it's so EASY. Carrie PASTA WITH TOMATO SAUCE AND GREENS 1 tbsp. olive oil 1 small onion, chopped 3 cloves garlic, finely chopped pinch hot pepper flakes 2 sweet red peppers, chopped 1 can (28 oz//796 ml) tomatoes 1 tsp. salt (or less) 1/2 tsp. pepper 1 lb. penne or other tubular pasta 1 lb. rapini or broccoli, trimmed and cut in 2-inch chunks In large deep skillet, heat oil over medium heat; cook onion, garlic and hot pepper flakes, stirring occasionally, for about 5 minutes or until softened. Add red peppers; cook for 5 minutes. Add tomatoes and juices, breaking up into small pieces with a fork; bring to a boil. Add salt and pepper. Reduce heat and simmer, uncovered, for about 15 minutes or until thickened. Meanwhile, in a large pot of boiling water, cook pasta for 6 minutes. Add rapini and return to boil; cook for 2-3 minutes or until rapini is tender and pasta is tender but firm. Drain well and add to sauce; toss to coat. Makes 4-6 servings Per serving: approx. 369 calories, 14g protein, 4g total fat (1g sat. fat), 69g carbohydrate, 7g fibre, 0mg cholesterol, 814mg sodium TIP: If rapini is a bit too bitter for your taste, use broccoli.
