" I don't like tofu in general, but found this recipe to be pretty good tasting. Info in parentheses is personal opinion and choices. ************ Faux Tuna (Chicken) Salad I have made this for myself... It is very good however I personally thought it tasted more like chicken salad than tuna. 1 lb firm tofu, frozen then thawed (used " Tree of Life " brand Baked Tofu...8 oz.) 1 stalk celery, diced (or more) 1/4 medium red onion, chopped (plain old onion) 1 small carrot, finely chopped (oops!..forgot the carrot) 1/2 cup soy mayonaisse (I used regular, it's what was on-hand) 2 Tbsp Braggs or soy sauce (Bragg's) 1/2 Tbsp lemon juice or vinegar (lemon) 1/2 - 3/4 teas. kelp powder (3/4 teas.) Squeeze excess moisture out of tofu, then crumble it (crumble very well) into small pieces. In a medium bowl, combine the tofu, celery, onion and carrot. Stir in the mayonnaise, Braggs, lemon juice and kelp and mix well together. Makes 2-4 servings. Buy the Kelp powder at a HFS as you can buy only what you need for pennies.
