Guest guest Posted February 11, 2002 Report Share Posted February 11, 2002 This recipe was originally named " Raw Salad with Dressing, " but the flavor reminds me of a Waldorf Salad. This amount made about two single servings (by my estimation). My husband wouldn't have eaten it anyhow (this is not his bag as a fun dish) so, it was all mine...ha-ha-ha! " Waldorf " Salad with Dressing 2 Red Delicious apples 1 Yellow Delicious apple 1 ripe pear 3 celery ribs 1/4 cup dates, chopped (the ones that come in a bag alreaady chopped would make this go faster) 1/2 cup pecans, chopped 1 large orange 1 lemon Chop celery fine and put into bowl. Peel and chop apples and pear into small pieces. Juice lemon and orange and pour over the fruit to keep it from browning. Let that stand for ten minutes then pour off the juice and save it. While the fruit is soaking, chop up the pecans and dates. Add half of the pecans to the fruit, along with all of the celery and dates. Dressing: Combine the other half of the pecans in a blender, along with the orange/lemon juice and puree to a sauce-like texture. Pour over the fruit and mix. Chill, then serve.
