I'd still recommend sprinkling some thyme on it. That's part of the flavor. (Note: I also prefer to avoid carbs from flour-based products.) 1 slice Yves Veggie Turkey Deli Slices 1 slice large tomato (about 1/4" thick) Favorite shredded cheese Put the deli slice down first, stack the tomato in the center of the slice. Sprinkle the shredded cheese on top of the tomato. Microwave 1 minute 30 seconds on high. I got it from a "free recipe" card attached to a subscription card for Vegetarian times. I wanted a sweet onion for this recipe (hate regular onions for the most part), but since vidalias aren't in season for another few months, I grabbed a bag of something called "mayan sweet tomatoes" at the local walmart supercenter's produce department. Similar in sweetness to vidalias & it wasn't all that bad when I sliced them (not seeming too potent as regular onions). Megan SAVORY TOMATO TART 1 T. extra virgin olive oil 1 large onion, sliced as thinly as possible 9-inch pie shell, unbaked 4 oz. goat cheese (I used plain feta cheese) 2 t. coarsely chopped fresh thyme or 1/2 t. dried 3 medium tomatoes, sliced 1/4 in. thick Preheat oven to 450 degrees. In a skillet, heat oil over medium-high heat. Add onion and cook, stirring frequently, until golden brown. Remove from heat. Lay pastry dough flat on an ungreased baking sheet. spread onion evenly on top, leaving a 1-inch border. Dot with goat cheese, sprinkle with thyme, and soem pepper. Place tomato slices on top, overlapping slightly. Sprinkle with salt & pepper. Fold pastry over topping, crimping the edges. Bake until crust is golden, 18 to 20 minutes.
